ManFood Monday * Cowboy Chili

I am so excited about today’s ManFood recipe, but I can’t take credit for this unbelievably delicious chili. This is a true ManFood recipe created by a real man, ha! My friend Jordan sent this one to me a while back and it is a must try for sure. I love this chili because there are so many unique and complex flavors, but it is still so simple to make. This is the perfect recipe for casual fall entertaining.

This recipe has a few of the usual suspects and a few unique ingredients. The coffee and the beer give the chili a complex and rich flavor and the chipotles spice things up! The original recipe had spicy madras curry powder, which is a spicy curry powder with a chili flavor. I skipped it because I couldn’t find it, but I really want to give it a try.

Every great chili recipe starts with onions. Heat some oil in a pan and add in the diced onions and garlic. Cook until the onions are translucent.

Next, add in the ground beef. I use a high quality lean ground sirloin. Brown the meat for about 6-8 minutes.

To heat things up a bit, add in 2 jalapeños, stemmed, seeded and chopped.

The original recipe called for 1 roasted Hatch chile, which is a green chile grown in the Hatch Valley in New Mexico. When I made this recipe, the Hatch chiles were not available so I threw in a few cans of diced green chilies. I would totally recommend trying the Hatch chiles if you can find them.

Now add the tabasco green jalapeño sauce.

Now let’s talk spices. I used red chili powder, pepper, coffee grounds, Mexican oregano and instead of the spicy madras curry, I used hot paprika. The coffee and Mexican oregano are really bold flavors but they really add a complexity that you don’t taste in most chili recipes.

Toss all of the spices in the pot and let simmer for 1-2 minutes.

Now we are really going to spice it up! I used 2 whole cans of chipotle peppers in adobo sauce. These are spicy but also really smoky and they add so much to the recipe. If you don’t want it too spicy, you could just add the adobo sauce and leave out the peppers.

Now to make sure this is a real ManFood recipe, we had to throw in a beer! I used 1 bottle of Shiner Bock and it was spot on. When I first read this recipe I thought about skipping the beer, but it really does make the dish!

Let’s talk toppings! We used Fritos, cheese, green onions, sour cream and yellow mustard.  Of course this is where personal preferences and creativity comes in to play, but I trusted Jordan’s recommendations and I am so glad I did- even on the mustard (but really, it’s delicious).

Ingredients

    Cowboy Chili
  • 2 lbs ground beef
  • 1 yellow onions, diced
  • 3 cloves garlic, minced
  • 2 jalapenos, stemmed, seeded and chopped
  • 2 small cans diced green chiles
  • 2 tablespoons red chili powder
  • 1 tablespoon black pepper
  • 1 teaspoon coffee grounds
  • 1 teaspoon Mexican oregano
  • 1 teaspoon cumin
  • 1/2 teaspoon spicy Madras curry powder or hot paprika
  • 1 teaspoon salt
  • 1 tablespoon Tobasco green jalapeno sauce
  • 1 small can chipotle peppers in adobo sauce
  • 6oz tomato paste
  • 1 14.5 oz can diced tomatoes
  • 1 32 oz can tomato sauce
  • 1 bottle of beer (Shiner Bock)
  • Toppings
  • 1 cup sour cream
  • 16 oz shredded cheddar cheese
  • 12 green onion, diced
  • yellow mustard
  • jalapeno (optional)
  • Fritos

Instructions

  1. Invite some friends over
  2. Heat a little oil in a large pot
  3. Add in the onion and garlic and cook
  4. Add in the meat and brown
  5. Throw in the green chiles, chili powder, pepper, coffee grounds, Mexican oregano, cumin, madras curry or hot paprika, and Tobasco green jalapeno sauce
  6. Let simmer for about 3-5 minutes
  7. Add in the tomato sauce, diced tomatoes, the bottle of beer, tomato paste and chipotle peppers
  8. Bring to a boil and then back down to a simmer
  9. Go chill, watch college football and drink some beer
  10. Go take a taste of the chili- How is it? Need Salt?
  11. Serve on a bed of Fritos in a set of bowls your grandma gave you when you left for college
  12. Add some raw chopped onion and cilantro as garnish if you went to OU and think that would impress your guests
  13. Add cheese if you are a cowboy
  14. Add mustard if you're from Blackwell, 'Merica
  15. Take the bowls of chili back to the living room, watch football and eat!
