Strawberry Nutella Ice Cream Sandwiches
Valentine’s Day is quickly approaching and there is no better way to say “I Love You” than with these unreal chocolate & strawberry ice cream sandwiches filled with Nutella! This recipe is delicious and you will have so much fun making these darling treats. After you taste these, you will be finding excuses to make them all year round!
You want to start by prepping the ice cream so that it is completly frozen when it’s time to assemble the sandwiches! Start by scooping the softened ice cream into a 9X13 baking dish, lined with plastic wrap.
Smooth the ice cream into an even layer.
Cover with plastic wrap and place back into the freezer.
Now it’s time to make the cookie dough. This cookie dough is perfect for the ice cream sandwiches because it isn’t too sweet but gives a rich chocolate flavor. Start the dough by combining the flour, coco powder and baking powder, then set aside.
Using an electric mixer combine the sugar, butter and vanilla.
Add in the milk and eggs
Once combined, slowly add in the coco and flour mixture.
When the dough is finished divide it in half and wrap in plastic wrap. Then place the wrapped dough in the freezer for 15-20 min to chill.
Roll the chilled dough out about 1/2 inch thick on a floured surface.
Using a heart shaped cookie cutter, press out the cookies. You should be able to get about 16 cookies which makes 8 ice cream sandwiches. Make sure you press out an even number of cookies!!
I used 2 different cookie cutters, one with a rippled edge and one with a flat edge and after they baked…. they all looked the same!
Once all the cookies are cut, place them onto a baking sheet lined with parchment and put them in the freezer for about 10 min. This chills the dough giving you a very soft cookie.
After chilling the cookies place into a 350 degree oven for 10-15 min and then allow the cookies to cool completely. Divide the cookies into two group, one half will make the tops (pick the pretty ones!) and the other half will make the bottoms.
This is where the good stuff comes in!! Turn the bottoms upside down and cover with Nutella! The combination of chocolate, strawberry and hazelnut is soo good!
Cover the cookies with Nutella and then pull out the ice cream to finish the sandwiches.
If the ice cream is very frozen, it is WAY easier to press out the heart shape and assemble the sandwiches!
Sometimes the ice cream doesn’t come out of the cookie cutter…. that’s okay just use your fingers and press the ice cream on the cookie covered in nutella!
Finally place the top cookie on!!
Place all of the ice cream sandwiches in freezer to harden and enjoy!!

- 2 3/4 cups all purpose flour
- 1/2 cup coco powder
- 2 1/2 teaspoons baking powder
- 2 teaspoons good vanilla
- 1 tablespoon milk
- 1 1/2 sticks salted butter, softened
- 1 1/2 cups of sugar
- 2 eggs
- 1/2 gallon Strawberry Ice Cream
- Nutella
- heart shaped cookie cutter
- plastic wrap
- parchment paper
Instructions
- Line a 9X13 baking dish with plastic wrap
- Scoop softened ice cream into the dish and spread into an even layer
- Cover with plastic wrap and place back into the freezer until frozen, about 30 min
- Mix together the flour, coco powder and baking powder, set aside
- Using an electric mixer combine the softened butter, sugar and vanilla
- Once combined add in the milk and the eggs
- Slowly add in the flour mixture until everything is combined
- Divide the dough in half and wrap in plastic wrap
- Freeze the dough for 10-15 min
- When the dough is chilled roll out onto a floured surface
- Roll the dough out about 1/2 inch think and use the cookie cutter to cut out the hearts
- Lay the heart onto a baking sheet lined with parchment paper
- Once all the cookies are cut, place the cookie sheet into the freezer for 10 min to set
- After 10 minuets in the freezer, place into a 350 degree oven for 10-12 minuted
- Let the cookies cool completely
- Spread Nutella on the underside of half of the cookies (this is the bottom of the sandwich)
- Then using the cookie cutter press out heart shaped ice cream and place on top of the Nutella
- Place on the top cookie and return to the freezer, serve frozen and enjoy!
