This is one of my summer favorites! It’s perfect for feeding a large group of people or just for something fresh to snack on throughout the week!

So lets begin…shall we! You will need bulgur wheat, salt, pepper, olive oil, green onion, red onion, parsley, lemon, cherry tomatoes, cucumber, and a little fresh mint.

Before it’s time to get your chop on, soak the bulgur wheat for 30 minutes to an hour in water and lemon juice.

When the wheat is moist, drain off the excess water using a strainer.

After draining the water, add the  juice of 8 lemons.

Next,  add the salt and pepper and toss.

Next, add 1 cup of olive oil.

Now It’s chopping time! Chop and add 3 cups of fresh parsley.

Then add 1/2 cup of chopped red onion.

Add 1 cup of chopped green onion.

Surely your hands are not getting tired of chopping yet…right… this is about that time I want to pull out my food processor, but DON’T because you are almost there and it’s so much better if you don’t!

Next, add 1 cup of chopped cucumber…don’t forget to peel it first!

Chop and add 3 cups of cherry tomatoes and stir.

Almost there…give it a taste, and add the final touches. I finish it off with the juice of 2 lemons, 1 teaspoon of salt, 1 teaspoon of pepper, and 1 tablespoon of freshly chopped mint!

Now, toss it, sample it, cover it, and refidgerate it for at least 4 hours before serving, but overnight is best.

• 16oz bag of bulgur wheat
• 1 bunch fresh parsley (3 cups)
• 11 lemons
• 1 cup olive oil
• 6 cups water
• 3 packs of cherry tomatoes (2 red, 1 yellow)
• 1 cucumber
• 1/2 cup chopped red onion
• 1 cup chopped green onion
• 1 tsp fresh chopped mint
• 3 1/2 tsp salt
• 3 tsp pepper

Directions

• Start by combining 6 cups of water to the bulgur wheat in large mixing bowl
• Add the juice of one lemon
• Soak bulgur wheat for 30 minutes to 1 hour in mixing bowl
• Using a strainer, drain the water from the bulgur wheat
• Add the juice of 8 lemons
• Add 2 1/2 tsp salt and 2 tsp pepper and toss together
• Chop 3 cups parsley, 1/2 cup red onion, and 1 cup green onion and add to the mixing bowl
• Peel and chop 1 cucumber
• Add 3 cups of cherry tomatoes and stir
• For the final touches, add the juice of 2 lemons, 1 tsp salt, 1 tsp pepper, and 1 tbs fresh chopped mint
• Toss all of the ingredients together, cover it, and refrigerate it overnight
