So lets begin…shall we! You will need bulgur wheat, salt, pepper, olive oil, green onion, red onion, parsley, lemon, cherry tomatoes, cucumber, and a little fresh mint.
Before it’s time to get your chop on, soak the bulgur wheat for 30 minutes to an hour in water and lemon juice.
When the wheat is moist, drain off the excess water using a strainer.
After draining the water, add the juice of 8 lemons.
Next, add the salt and pepper and toss.
Next, add 1 cup of olive oil.
Now It’s chopping time! Chop and add 3 cups of fresh parsley.
Then add 1/2 cup of chopped red onion.
Add 1 cup of chopped green onion.
Surely your hands are not getting tired of chopping yet…right… this is about that time I want to pull out my food processor, but DON’T because you are almost there and it’s so much better if you don’t!
Next, add 1 cup of chopped cucumber…don’t forget to peel it first!
Chop and add 3 cups of cherry tomatoes and stir.
Almost there…give it a taste, and add the final touches. I finish it off with the juice of 2 lemons, 1 teaspoon of salt, 1 teaspoon of pepper, and 1 tablespoon of freshly chopped mint!

Now, toss it, sample it, cover it, and refidgerate it for at least 4 hours before serving, but overnight is best.

• For the final touches, add the juice of 2 lemons, 1 tsp salt, 1 tsp pepper, and 1 tbs fresh chopped mint
