Bacon Wrapped Apricots
When it comes to holiday dinners, our motto is always the more the merrier, but when you roll 40 deep, I highly recommend having a serious game plan and serious appetizers! You never know when you are going to burn/dry out/ under cook the turkey, so having a delicious spread of appetizers will keep your guests happy and out of your way just in case something goes wrong (it wont if you check out Turkey 101 up tomorrow). Our Thanksgiving menu is pretty traditional, so I always try to get creative with the appetizers. This year I’m trying something new and making bacon wrapped apricots. These could not be easier, and the apricot adds a perfect touch of fall sweetness. I will also be serving our French onion dip with veggies and a beautiful cheese tray!
For this one, all you need is some bacon and dried apricots, ha! It’s that simple. I use toothpicks or small wooden skewers to secure the bacon. You can get pretty creative with this recipe…we tested them with jalapenos and goat cheese and they were really delicious, but for a crowd I like to keep it simple.
Cut the bacon strips in half.
Simply wrap the bacon around the dried apricot and secure the bacon with the toothpick.
Place these delicious little bites on a greased baking sheet and bake at 375 for 20-25 minutes until the bacon is cooked through. At about 15 minutes, turn them over and finish cooking.
Serve on a platter and enjoy! These are great for a party because they are delicious at room temperature.
Ingredients
- 1 package bacon
- 1 package dried apricots
- toothpicks
Instructions
- Preheat the oven to 375 degrees
- Cut the strips of bacon in half
- Wrap each apricot with a half strip of bacon and secure with a toothpick
- Lightly grease a baking sheet with some olive oil
- Place the bacon wrapped apricots on the baking sheet and bake for 20-25 minutes until the bacon is cooked
- After about 15 minutes, flip them over and finish cooking
