Words cannot describe how over the top delicious today’s ManFood recipe is! It’s hard to go wrong with nachos, but these chipotle bbq pork nachos are on another level. The chipotle bbq pork is a perfect combo of sweet and spicy and gives classic nachos a delicious little twist.
Let’s start with the pork! As you can see, this recipe is sooooo simple- all you need is a pork butt, some bbq sauce and a can of chipotle peppers. The best part about this pork recipe is that you can do about 100 different things with it. It’s perfect for a quesadilla, sandwich, salad, taco, burrito…. the possibilities are endless!
Start by putting a 3 1/2- 4lb pork butt in a large Dutch oven.
Pour in a large bottle of your favorite bbq sauce.
Then add in a large can of chipotle peppers in adobo sauce.
Give the whole thing a stir, cover the pot and cook for about 4 hours in a 300 degree oven.
After about 4 hours, the pork should be falling apart. Using two forks, shred up the meat right in the pot. If it does not shred easily, it needs more time so pop it back in the oven.
Now for the nachos, we kept it simple just using a combo of pepper jack cheese and cheddar, some fresh cherry tomatoes, green onions and cilantro, but feel free to get creative. I think some sour cream and jalapenos would be delicious…..
Start by putting down a layer of your favorite corn chips on a large baking sheet.
Next, layer on the cheese. I always put the cheese on first to protect the chips from the pork- it keeps the chips from getting soggy.
Then layer on some of the delicious shredded chipotle bbq pork.
Next add a few of the diced cherry tomatoes and green onion.
Then, start over by adding another layer of chips.

Another layer of cheese and then top with the remaining cherry tomatoes and green onions.
Pop these guys in a 450 degree oven for about 5-7 minutes until the cheese begins to melt and bubble.
Top the nachos with some fresh cilantro and enjoy!
Ingredients
- 3 1/2 -4lb pork butt
- 32oz jar of bbq sauce
- 11oz cab of chipotle peppers in adobo sauce
- 1 large bag of corn chips
- 8oz pepper jack cheese, shredded
- 8oz cheddar cheese, shredded
- 1/4 cup cherry tomatoes, diced
- 6 green onions, diced
- 1 handful fresh cilantro, chopped
Instructions
- Preheat the oven to 300 degrees
- Place the pork butt (fat side up) in a large Dutch oven
- Add in the bbq sauce and chipotle peppers
- Cover the Dutch oven and cook in the 300 degree oven for 3 hours
- After 3 hours, turn the pork butt over and cook for at least another hour
- You will know it is done when the meat is falling apart and can be shredded easily
- Shred the pork in the pot using two forks
- Preheat the oven to 450 degrees
- Place a layer of corn chips on a large baking sheet
- Layer on the cheese
- Llayer on some of the pork
- Add half of the cherry tomatoes and green onion
- Repeat above for another layer
- Top the nachos with another layer of cheese
- Bake in the 450 degree oven for 5-7 minutes until the cheese is melting and bubbly
- Top with the fresh cilantro and enjoy
