Steak & Egg Bagel with Herb Cream Cheese and Roasted Tomatoes
I’m not much of a breakfast person- all I need is a super strong coffee and I’m good to go. I am, however, a steak and eggs person and a few of my favorite men are most definitely breakfast people, so I figured a steak and egg bagel would be the perfect Father’s Day breakfast surprise! This is no ordinary breakfast sandwich, and if you ever want to really make someone feel loved, make this! Steak and eggs are hard to beat, but the spicy herb cream cheese, roasted tomatoes and perfectly toasted poppy seed bagel take things to the next level. Trust me one this one- MAKE IT!
You will need cream cheese, green chilies, green onions, cilantro and one jalapeno for the herb cream cheese. Of course you need steak and eggs- I am using a New York strip because it’s full of flavor and cooks up quickly, but you could also use flank steak. I picked up some fresh poppy seed bagels from a local bakery but you can use any kind you like. Finally, you will need some ripe vine tomatoes.
Start by making the herb cream cheese. I used diced green chilies, cilantro, jalapeno and green onion.
Add in room temp cream cheese
Season with Kosher salt and mix everything together. Set the cream cheese in the refrigerator while you prepare the steak and eggs.
Season the steak on both sides with salt, pepper, garlic powder and Worcestershire sauce.
Set aside until you are ready to cook.
Slice the tomatoes into 1/4 inch slices and season with olive oil, salt, pepper and crushed red pepper. Roast the tomatoes in a 500 degree oven for 15-20 minutes.
Sear the steaks on each side for 2 minutes. After you sear them, place them in the 500 degree oven for 4 minutes for medium.
After 4 minutes, remove the steaks from the oven and cover with foil. Let them rest while you cook the eggs.
Remove the tomatoes from the oven and set aside
Cook the eggs over easy and season with salt and pepper
Slice the steak into thin slices
To assemble the bagels, spread on the herb cream cheese on both sides of the bagel
Add a few slices of steak
Add a roasted tomato
Add an egg
Top with one more roasted tomato
Pop the top on and enjoy!

- 1 tablespoon green onions, chopped
- 1 tablespoon cilantro, chopped
- 1 jalapeno, seeded and diced
- 2 tablespoons canned green chilies
- 3 New York strip steaks (seasoned with salt, pepper, garlic powder and Worcestershire sauce)
- 4 organic eggs
- 4 poppy seed bagels
- 3 large vine tomatoes (seasoned with salt, pepper, crushed red pepper and olive oil)
Instructions
- Combine the cream cheese, green onions, cilantro, jalapeno, and green chilies in a mixing bowl, mix thoroughly and cover and set in the refrigerator while you make the steak and eggs
- Preheat the oven to 500 degrees
- Season the steak on both sides with salt, pepper, garlic powder and Worcestershire sauce and set aside
- Slice the tomatoes into 1/4 inch slices and place on a baking sheet
- Season the tomatoes with a drizzle of olive oil, salt, pepper and crushed red pepper
- Place the tomatoes in the oven and bake for 15-20 minutes
- Pat the steaks dry before you sear them
- Heat 2 tablespoons of light colored oil (vegetable or extra light olive oil) over a high flame until the pan is very hot
- Sear both sides of the steaks for 2 minutes
- Place the steaks in the 500 degree oven and cook for 4 minutes (keep the steaks in the skillet)
- After 4 minutes, remove the steaks from the oven and cover with foil while you cook the eggs
- Cook the eggs over easy in a skillet and season with salt and pepper
- Toast the bagels
- Slice the steak into thin slices
- To assemble the bagels, spread the cream cheese on both sides, add the sliced steak, a tomato, an egg and top with another tomato
- Serve immediately
- Enjoy
