Chicken and Fruit Salsa


Let’s talk Labor Day Dish! The end of summer has arrived so let’s go out with the perfect fresh and fruity chicken dish. This dish is perfect for any occasion but especially great for dinner parties. It looks beautiful on the plate, and I promise that both your guests and tastebuds won’t forget it!


First let’s marinade the chicken! This marinade is one of my absolute favorites. Not only is it the best chicken marinade, it also goes great with beef, pork, fish and even duck.  In a large bowl combine the lemon juice, soy sauce, red wine vinegar, oil, worcestershire sauce, garlic, black peeper and green onions. Add in the chicken breasts and let marinade for at least 3 hours.


Now let’s talk fruit salsa! Oh my this fruit salsa is a wonderful combination of sweet and savory flavors. Like the marinade, this salsa is delicious on just about anything!


First chop up the pineapple, strawberries and peaches into bite sized chunks and place into a large bowl.


Next, add in the diced red onion, green onion and finely chopped jalapeño.


Finally, chop up the cilantro and it into the bowl.


Now it’s time to add in the lime juice, red wine vinegar, olive oil and a pinch of salt. Combine all the ingredients and refrigerate for at least 3 hours. The best is to make this salsa the night before so all the flavors really come together!


The last thing you need to do is cook the chicken! I used an indoor grill but you can cook this chicken a thousand different ways. Using a grill pan or indoor grill, cook each side for about 5 to 8 minutes or until cooked through. This recipe is also great for outdoor grilling!


Oh my… Get excited!!! Place your chicken on a serving dish and top with the salsa!

  • the juice of 1 lemon
  • 1/2 cup soy sauce
  • 1/4 cup red wine vinegar
  • 3 tablespoons vegetable oil
  • 2 tablespoons worcestershire sauce
  • 1 large clove of garlic, sliced
  • 1/2 tablespoon pepper
  • 1 cup chopped green onion


  • Combine all of the ingredients into a large bowl and add in the chicken. Let marinade for at least 3 hours.
  • Cook the chicken on a grill pan over medium high heat for 5 to 8 minutes or until done.
  • This is also great for grilling outside!


{fruit salsa}

  • 3 cup of chopped pineapple
  • 3 cups of chopped strawberries
  • 2 cups of chopped peaches
  • 1 cup of chopped cilantro
  • 1 cup of diced red onion
  • 1 cup chopped green onion
  • 1 finely chopped jalapeño
  • the juice of 1 lime
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar


  • Start by chopping up the pineapple, strawberries and peaches. If you can’t find good fresh pineapple or peaches you can used canned.
  • Next chop up the red onion, green onion, jalapeño and cilantro add to the fruit and combine.
  • Now add in the lime juice, vinegar and oil and mix all together.
  • Refrigerate for at least 3 hours and it’s even better overnight!
