If you are looking for the perfect dip for a tailgate or party, here it is! This recipe was inspired by our favorite local Mexican restaurant’s hot bean dip. We are spicing it up and promising that you will not have leftovers with this one! The best part about this recipe, is that you can make it in no time and the ingredients are so simple!

The grocery list on this one is so easy- you just need some pepper jack cheese, 1 fresh jalapeno, two cans of refried beans and two small cans of diced green chilies.

Add the beans and green chilies into a saucepan and heat over a medium high flame.

Shred up the pepper jack cheese. I like to use pepper jack because it adds a little more heat, but you could also use cheddar or Colby Jack.

Then, I slice up a jalapeno into thin slices. I left the seed in because I like to make this dip spicy, if you don’t like spicy, take out the seeds or just skip the jalapeno!

Add the bean and green chili mixture into a small baking dish.

Place the jalapenos over the top of the bean and green chili mixture.

Cover the entire dish with the pepper jack cheese and bake in a 425 oven until the cheese starts to bubble.

When the cheese begins to melt and bubble, turn on the broiler and broil for about 2 minutes until the cheese turns golden brown. Serve with tortilla chips and enjoy!

Ingredients

  • 2 16oz cans refried beans
  • 2 4.5oz cans diced green chilies
  • 1 large jalapeno, sliced
  • 2 cups pepper jack cheese, shredded

Instructions

  1. Preheat the oven to 425
  2. Mix the beans and green chilies together in a saucepan and cook for about 5 minutes over a medium flame
  3. Pour the bean and green chili mixture into a medium sized baking dish
  4. Layer the jalapeno slices over the bean and chili mixture
  5. Top with the pepper jack cheese
  6. Bake in the 425 degree oven for 15 minutes until the cheese starts to melt and bubble
  7. When the cheese is bubbling, turn on the broiler and broil for about 2 minutes until the cheese turns golden brown
  8. Serve hot with tortilla chips
