Pineapple BBQ Pizza

The only thing that can beat a delicious made from scratch pizza crust recipe, is an easy made from scratch pizza crust recipe! This one is painless and is sure to be a favorite.

Start the crust by adding a package of yeast to warm water. Set aside and let sit for a few minutes so that the yeast can activate.

In an mixer, mix together bread flour and salt.  The Bread flour will give you an extra crispy crust, but if you don’t have any, all purpose works too!

While the mixer is on, add in the water and yeast mix.

Mix for just a second and then add in the olive oil and honey. Make sure you use good olive oil!

 Mix until the dough comes together. If the dough is sticky, add a tablespoon of flour and if it’s crumbly, add a tablespoon of water. Next, put the dough onto a lightly floured surface.

Knead the dough and form into a ball.

Next, place the dough in a bowl with the rest of the olive oil, making sure all sides of the dough are coated. Cover with plastic wrap and let rise for at least 1 hour.

While the dough is rising you can bake the chicken and prepare the toppings.

Start the chicken by seasoning both sides with salt, pepper and crushed red pepper. Then pour on enough of your favorite BBQ sauce to cover the chicken. Cook the chicken in a 375 degree oven for 30 minutes.

While the chicken is baking, start chopping up your toppings. For this one, I start by thinly slicing up a red onion.

Next, cut fresh mozzarella into thin slices.

Now chop up the pineapple. I like to cut this into pretty small chunks so that you get the sweetness of the pineapple in every bite!

Last but not least, chop up the cilantro. This will go on when the pizzas come out of the oven.

When the chicken is finished, use two forks to shred it up and set aside while you prepare the dough.

You know the dough is ready when it has doubled in size.

At this point you can either make 12 mini pizzas or two 14 inch pizzas. The mini pizzas are great for entertaining and the big ones are perfect for a simple week night dinner. For the mini pizzas, divide the dough into 12 pieces and roll into balls.

Using a rolling pin, roll the dough out about 3/4 inch thick.

When you have all the dough rolled out, place it onto a greased baking sheet and assemble the pizzas.

Start by adding a thin layer of BBQ sauce on the bottom of the pizza, then top with the shredded chicken, red onion and pineapple. Finally, top with the mozzarella and drizzle a little more BBQ sauce on. Place into a 500 degree oven for 15-20 minutes or until the crust is golden and the cheese begins to brown.

When the pizzas come out, top with the fresh cilantro and enjoy!

{Pizza Crust}

Ingredients

  • 1 1/2 cups warm water
  • 1 package of instant dry yeast
  • 3 1/2 cups of bread flour
  • 2 teaspoons of salt
  • 2 tablespoons of good olive oil, plus more for finished dough
  • 1 teaspoon honey

Directions

  • Start by combining the warm water and yeast, set aside
  • In an electric mixer, combine the salt and flour
  • While mixing, add in the water and yeast mix
  • Then add in the olive oil and honey
  • If the dough is sticky add in flour 1 tablespoon at a time,  if it is too dry add in warm water a tablespoon at a time
  • Place the dough onto a lightly floured surface and roll into a ball
  • Place the ball in a bowl adding the 2 teaspoons of olive oil, coating all sides
  • Cover with plastic wrap and let rise, at least 1 hour
  • When ready to assemble the pizza divide the dough in to 12 balls to make individual pizzas
  • Roll out each ball until the crust is about 3/4 inch thick
  • Place onto a greased pan and add toppings
  • By dividing the dough in half you can make two 14inch pizzas

 

{Hawaiian Pizza}

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 cups BBQ sauce
  • 1 teaspoon Kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon crushed red pepper
  • 1 small red onion, thinly sliced
  • 1 small pineapple, diced
  • 2 8oz packages of fresh mozzarella, thinly sliced
  • 1/2 cup chopped cilantro

Directions

  • Place the chicken breasts in a baking dish and season with salt, pepper and crushed red pepper on both sides
  • Pour over 1 cup of BBQ or until the chicken is almost covered
  • Cook the chicken uncovered in a 375 degree oven for 30 minutes
  • While the chicken is cooking, slice up the onion, pineapple fresh mozzarella and cilantro
  • When the chicken is finished, use 2 forks to shred it
  • {Assembling the pizzas}
  • Start by adding a thin layer of BBQ onto the dough
