Thai Lettuce Wraps
Larb salad is one of my favorite Thai dishes. Its fresh, limey and full of bright flavors. I wanted to create a lettuce wrap with all of the flavors of this delicious Thai favorite. I love this recipe because the ingredients are simple, it’s beautiful to serve, and you can get as creative as you want with the toppings. I love serving this on a huge platter and making it a build your own dish- I think its a great idea for a summer dinner party! The star of this recipe is the Thai Lime Dressing- I used Ponzu to give it a rich citrus flavor and I think I will be using this dressing on many more recipes to come!
Thai Lettuce Wraps
Servings: 6
Ingredients
Thai Lime Dressing
- 1/2 cup Ponzu
- 4 tsp fresh lime juice 2 limes
- 2 tbsp Sambal Oelek chili paste
- 1 tsp fish sauce
- 2 tsp sesame oil
- 2 tsp maple syrup
Lettuce Wraps
- 2 lbs ground chicken or pork or turkey
- 3 cloves garlic, minced
- 4 scallions, diced
- 1 tsp fresh ginger, minced
- 1 half of the Thai Lime dressing
- 1/4 tsp fresh cracked black pepper
- 1/4 tsp salt
Toppings
- 1 head butter lettuce
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp fresh mint, chopped
- 2 tbsp fresh basil, chopped
- 1/4 cup roasted peanuts, chopped
- 2 avocados, sliced
Instructions
Thai Lime Dressing
- Add all the ingredients together and stir
- Divide the dressing in half and place into separate bowls
Lettuce Wraps
- heat 2 tablespoons olive oil over med/high flame in a skillet
- add the ground chicken and cook until it begins to brown
- after about 5 mins, when the chicken is broken up and beginning to brown, add the ginger, garlic and scallion
- continue to stir
- season with salt and pepper and continue to cook about 4 mins
- add half the amount of the Thai Lime Dressing to the chicken mixture and finish cooking
- to serve the lettuce wraps, place the butter lettuce on a large platter with the remaining Thai Lime Dressing in the center. On the opposite side of the platter, place the chicken mixture. Using the reaming space, arrange the remaining toppings- fresh herbs, red onion, avocado and peanuts
