heat 2 tablespoons olive oil over med/high flame in a skillet
add the ground chicken and cook until it begins to brown
after about 5 mins, when the chicken is broken up and beginning to brown, add the ginger, garlic and scallion
continue to stir
season with salt and pepper and continue to cook about 4 mins
add half the amount of the Thai Lime Dressing to the chicken mixture and finish cooking
to serve the lettuce wraps, place the butter lettuce on a large platter with the remaining Thai Lime Dressing in the center. On the opposite side of the platter, place the chicken mixture. Using the reaming space, arrange the remaining toppings- fresh herbs, red onion, avocado and peanuts
